Ingredients
- 1 egg
- Splash olive oil
- 2 slices bread (whole wheat prefered)
- 2 TBS mayo
- ¼ cup prepared kimchi
- Lettuce, for serving
Instructions
- Cook the egg sunny side up in a small skillet with a splash of olive oil. Covering the skilllet with a lid will help the white to cook faster without over cooking the yolk.
- Toast your bread slices and spread them with mayo.
- Top with kimchi, lettuce, and the fried egg.
- Serve with a napkin.
