INGREDIENTS
FOR PASTA
- 2 cups Macaroni Pasta
- 1 tablespoon Oil
- 1 teaspoon Salt
MACARONI INGREDIENTS
- 2 tablespoons Oil
- 1 small Onion finely chopped
- ½ cup Carrots diced
- 1½ cups Bell peppers diced
- ¾ teaspoon red chili flakes
- 1¼ teaspoon Italian Herb Seasoning
- ½ teaspoon Cumin powder
- ½ cup + 1 tablespoon extra Marinara sauce
- 1 tablespoon Red chili sauce
INSTRUCTIONS
BOIL MACARONI
- Boil water + oil + salt in a heavy-bottomed pan. When the water comes to a boil, stir in macaroni.

- Use the guidelines on the box and cook macaroni according to package instructions. PROTIP – Do not overcook the pasta — Cooking pasta until al dente is the key to a perfectly prepared dish. Al dente macaroni holds its shape better during sautéing and finishes up perfectly to an appealing dish. An overcooked and squishy macaroni makes the dish look unappetizing.

- Rinse well with cold water after straining.

COOK MASALA MACARONI
- Add oil to a large pan over medium-high heat. Add onions.

- Sauté for 2-3 minutes, or until the onion softens and becomes translucent.

- Stir in carrots and cook for 3-4 minutes until the carrots are soft and tender.

- Stir in bell peppers and sauté for a few minutes.

- Stir in Italian seasoning, chili flakes, cumin powder, and salt.

- Stir in marinara sauce and chili sauce.

- Mix until all the ingredients are well blended.

- Add boiled macaroni.

- Reduce the heat to the lowest setting and mix until macaroni is evenly coated in the sauce.

- Garnish with chopped scallions, cilantro leaves, and serve.
